Start with studying 25 iconic cheeses and behind the scenes of the World's cheese industry, take an exam and receive a certificate. You can progress all the way to Level 4, Master of Cheese. The Irish School of Cheese was founded by Avril Molloy, an expert in farmhouse cheese and speciality food. She has attained both Levels 1 and 2 of the Academy of Cheese certifications, studying with Paxton & Whitfield and The Guild of Fine Food in London to become Ireland’s first accredited Training Partner in Ireland. She has delivered cheese education projects with Bord Bia, La Rousse Foods, Gleneely Foods, restaurants and speciality food clients. Avril was previously Retail Manager for Sheridans Cheesemongers. Avril is particularly enthusiastic about Irish farmhouse cheeses but loves to share her knowledge of fine food from all over Europe.
