It was founded in 2019 by Avril Molloy, one of the foremost experts in artisan, farmhouse and homestead cheese in Ireland. About our Founder, Avril Molloy: In 2019, after a successful career in Human Resources and Training, Avril exchanged her corporate suit for jeans to train from the farm up as a Cheesemonger to follow her passion, food. After progressing to National Retail Manager at renowned Sheridan’s Cheesemongers, she studied in London with The Guild of Fine Food and Paxton & Whitfield, to become the first Academy of Cheese Training Partner in Ireland. Avril now delivers training, education and events for cheese retailers, wholesalers, luxury hotels and some of Ireland's top restaurants.
Avril’s goal is to ensure food businesses can confidently and successfully deliver a best-in-class cheese experience to their customers, increase sales, reduce waste and showcase the craft of farmhouse cheese makers.
